The things you will need.
1, 1 pound of pasta. {Orecchiette}
2, 1 pound of sausage. 3 links of sweet Italian sausage and 2 links of hot Italian sausage.
3, 1 bundle of broccoli Rabe.
4, 3 cloves of garlic.
5, 3 tablespoons olive oil.
6, salt and pepper.
7, 1 cup parmesan cheese.
What you'll need to do is get everything ready on your counter or wherever you're going to prep the food. get out Take the 3 cloves of garlic peeled them slice them not to thick but not to thin. Put them to the side. Then wash the broccoli rabe and dry it with some paper towel. Cut about an inch of the bottom of the broccoli rabe. I find I can grab it all with one hand and cut it. Once the bottoms are cut off then cut the broccoli rabe in 1 inch pieces and put it to the side. Get a big pot and fill it half way and add A generous amount of salt to the water. Turn it on and wait for it to boil. While you're waiting for the water to boil. Get a sauce pan and put the all of oil in the sauce pan enough to brown the sausage. Take the sausage and take your knife and cut down the side of the casing of the sausage. Take the sausage out of the casing's crumbling it up with a fork until it's kind of a brown. Once it's brown take the sausage out of the pan. And put it in a dish leaving the oil and grease drippings in the pan. At this point the water that you're going to cook the pasta in should be boiling. Take the broccoli rabe and put it in boiling water. That's right we are going to use the same water to cook the pasta in. Take the garlic that you cut up and put that in the drippings that the sausage cooked in. Once the garlic has a light brown color to it, take a slotted spoon and spoon the broccoli rabe out of the water. Shaking most of the water off it and drop it right in the pan with the garlic over medium heat. While that's cooking open the box of pasta and put it in the same water that you where cooking the broccoli rabe in. Cook it until it's el dentate. When the pasta is done scoop about a half a cup of the pasta water out and sent that to the side. Drain the pasta. Do not rinse it. Get your Parmesan cheese and grater and grade a half a cup of cheese. Take the cheese and mix it with the sausage and broccoli rabe and garlic mixture. Add about half of the pasta water to the sausage and broccoli mixture. The pasta water doesn't have to be added. I like it because it adds body to the mixture. Get a bowl put some in it and top it with more grated cheese. There you have it. A quick and simple and very delicious meal.
You don't have to use pork sausage I did but you can get Italian flavored chicken sausage and Italian flavored turkey sausage as well and use those as a substitute. Play with the recipe change it up if you'd like but if you do let me know how it turns out.
