Ingredients you will need for Healthy Chicken Stew that’s super easy.
1, 32 ounces of chicken stock.
2, 1 large onion cut up.
3, 1/2 teaspoonful organic turmeric.
4, fresh black pepper.
5, sea salt and Adobo to taste.
6, coconut oil or any oil of your choice.
7, 3 large potatoes peeled and diced.
8, 1 bag of mixed frozen vegetables.
9, Approximately a quart of water or less.
10, 1/2 chicken breast and 2 legs on the bone and skin on.
Prep time: 10 minutes
Cook time: 2 hours
After getting everything prepped.The chicken washed and seasoned with Adobo ,sea salt and black pepper. Peel and cut up the potatoes, rinse them off and place them in a bowl of cold water so they don’t turn brown. Peel and cut up the onion. In a stock pot place 1 tablespoon of coconut oil in the pan and also the cut up onion. Turn the stove on medium low heat. After a few minutes put the chicken in the pot and cook until the skin is golden brown. Then add the chicken stock and almost a quart of water this is so the liquid is covering the chicken. So you may not need so much water. It really depends on how big the stock pot is. Next add the turmeric and black pepper. When it comes to a boil turn it down to low and let it cook for about an hour or one hour and a half. Once the chicken starts to fall off the bone then it’s time to take all the bone and fat out of the pot and leave the chicken in the stew. Take the potatoes and drain the water off and add them to the stew along with the vegetables. I used an entire bag of vegetables. Cook them on low until the potatoes are done (when they slide off the fork after you poke them ). Top with a little black pepper and you have a hearty healthy chicken stew. Talk about a healthy stew!
